Veggie Burgers: Meatless Monday

It has been a hectic couple weeks and I do apologize for my silence. As I said, it has been a hectic couple weeks filled with hours toiling in the kitchen, both at home and at work so I thought I would share one of the  recipes I tried out this holiday because no matter how busy life gets ... 'people gotta eat'!

These veggie burgers are high in protein, and super tasty( according to my family, but you know how family can be biased)! Oh, and did I mention they contain no meat?

Ingredients


  • 1 can of white kidney beans( drained)
  • 2 cups of cooked brown lentils( you can just boil these before you prepare your burgers, but make sure they retain some moisture)
  • 1/2 diced onion
  • 1 grated carrot
  • 1/8 cup of white flour 
  • a pinch of salt
  • Olive oil
  • Mixture of different herbs and spices
Method 

  • Using a wooden spoon mash the kidney beans, onions, carrots, herbs and spices into a large bowl until it gets mushy
  • Measure out your 1/8 cup of flour and sift it into the patty mix 
  • Continue to mash the mixture
  • Shape the mixture into patties.
  • Optional: You may lightly coat the patties with flour, for a more crispier patty
  • Heat 2tbs of olive oil in a large pan
  • Fry patties for  3 minutes on each side, or until you are happy with them
  • Serve the patties on a burger roll with additions of your choice
  • Enjoy!
